My Favorite Dressings (well…just a couple)

Dressings have become a mainstay of my cook-up because they fit easily into my overall Cook-up philosophy and goals which are: 1. fast healthy food

2.YUMMY

3. Save me time and money.

Green Goddess Dressing

Green Goddess Dressing

Ingredients:

1c whole milk greek yogurt (or sour cream)

1c parsley

1c mixed leafy herbs: dill, mint, cilantro, and/or tarragon

2T chopped chives

2T fresh lemon juice

1/2 t zest

1T EVOO

2t capers (or anchovies!)

1 garlic clove

Salt and Pepper to taste

Directions: pulse herbs, capers and garlic in a food processor add all other ingredients and then store in a mason jar or glass jar in your fridge. This dressing goes well with any kind of lettuce salad, spiral beet salad, pita sandwiches or slices, for veggie dip or drizzled over roasted veggies like: broccoli, cauliflower, or squash and amazing over a roasted veggie grain bowl with quinoa or farro.

Avocado Cilantro Lime Dressing

Avocado Cilantro Lime Dressing

Ingredients:

2c fresh cilantro

2 garlic cloves minced

1/4c fresh lime juice

2t maple syrup/honey

1/2t red chili flakes

Salt and Pepper to taste

6T EVOO

1-2T water if needed to thin.

1 ripe avocado or 1/2c plain whole milk greek yogurt,

Directions: Put all ingredients in a food processor and blend till smooth. This will keep in the fridge for a week (but it will be gone way before that!).

Tahini Dressing

Tahini Dressing

Ingredients:

1/4c smooth tahini

3T water, more if needed to get to desired consistency

2T fresh lemon juice

2T EVOO

1T maple syrup

1t toasted sesame oil

1 grated garlic clove

Directions: Whisk all ingredients together and store in a mason jar in the fridge.

This dressing is nutty, savory, with a little tang of lemon and beautiful balance of sweetness from the maple syrup. Tahini is associated with Middle Eastern food and is delicious on salad, roasted veg, roasted veg and grain bowls, veggie dip or anything that you want to experiment with. It is a staple to have in the fridge at all times!
